Meatloaf Meal Prep


Serves 15-20 (15=7 oz portion) (21 for 5 oz portion)


INGREDIENTS

1 large yellow onion, ~ 300g

1 package Crimini mushrooms, 10 oz/~285g

140g kale

75 g butter

100g Almond Flour

50g Coconut Flour

1 tsp/5g Garlic Powder

150g heavy cream

5 links Hot Italian Sausage ( I used Primo from Costco), ~ 585g

1200g 88% Lean Ground Beef

6 each egg yolks

2 ea whole eggs

65g Sriracha

METHOD

  1. Begin by pulsing both onion and mushrooms in a food processor until finely chopped. Heat the butter in a large skillet or saucepan then add onion and mushroom mixture. Saute until cooked through. Add the chopped kale and season to taste w/ salt and pepper. Once the kale is wilted and cooked through with no remaining juices, turn off the heat and set aside to cool for about 10 minutes.

  2. In the bowl of a standing mixer add beef and uncased sausage meat. Mix on low to combine. Add the eggs, egg yolks, heavy cream, and the veg mixture to the bowl. Mix on low to combine, scraping down the sides to encourage even distribution.

  3. This can be portioned out into individual loaves or made into a large loaf depending on your purpose. For a large loaf that can be divided after cooling, place the meat mix into a large casserole dish and pat down to create an even layer. Place into the oven and bake for 20 minutes.

  4. Meanwhile, mix the ketchup and sriracha. Once the laf has been in the oven for 20 min, remove and coat the top with the mix and continue baking for another 40-45 minutes or until an internal temp of 160 has been achieved.
