Flourless Chocolate Keto Cake


Makes one 8 inch cake


INGREDIENTS

4 oz. unsweetened chocolate

1 stick butter (113 grams), salted is fine

2 tablespoons avocado oil

¾ cup keto confectioner’s sugar (swerve)

4 large eggs

½ cup cocoa powder

Vanilla/almond extract optional

Method

  1. Preheat oven to 325

  2. Prepare 8 inch round cake pan.

  3. Chop chocolate into small pieces.

  4. In a double boiler melt chocolate with butter, stirring until smooth.

  5. Remove bowl from heat and add eggs, whisk well.

  6. Sift cocoa powder and Swerve over batter and whisk until just combined.

  7. Pour batter into pan and bake in middle of oven 15 minutes, then turn oven down to 275 and bake an additional 15 minutes or until top has formed a thin crust.

  8. Remove and cool at room temperature. Ideally, cooling overnight and cutting is best.
